Post Disney Funk and Caramalitas
Makes about 12 to 16 bars or a 9x13 inch pan.
  • 2 Cups All-Purpose Flour
  • 1+3/4 Cup Quick Cooking Oats
  • 1+1/4 Cup Brown Sugar, tightly packed
  • 1 Teaspoon Baking Soda
  • ¼ Teaspoon Salt
  • 2+1/2 Sticks Unsalted Butter, Melted
  • 1+1/4 Cup Chocolate Chips
  • 1 Cup Roasted Pecans, roughly chopped
  • 1 - 10 oz. Package of Caramels (about 52), unwrapped
  • ½ Cup Heavy Cream
  1. Preheat oven to 350F. Line a 9x13inch pan with parchment paper or lightly grease with butter or baking spray
  2. Whisk together flour, oats, baking soda, salt. Set aside.
  3. Beat together melted butter and brown sugar until combined. Stir in dry ingredients and mix until combined.
  4. Pat ½ of mixture into prepared baking dish. Place in preheated oven and bake for about 12 to 15 minutes. Remove from oven and set aside to cool. Prepare filling.
  5. In a medium sized saucepan, combine unwrapped caramels and heavy cream and cook over medium-low heat. Stir until caramels are melted and smooth.
  6. Pour caramel filling over crust. Sprinkle chocolate chips and roasted pecans over caramel filling. Crumble remaining oatmeal mixture over filling and place in preheated oven and bake for an additional 20 to 25 minutes until golden brown.
  7. Remove from oven and let cool before cutting.
